First time ever I tried Gordon Ramsay's braised beef short ribs. You can find his recipe on youtube. Did about 4 pounds, and they turned out absolutely magnificent. Fantastic flavour, super tender, and very easy to do. Would be wonderful with any type of tougher meat or heavy game like moose or elk, I imagine.
Short hand recipe: sear seasoned ribs in olive oil and garlic, add in tomato paste, then lots of red wine reduced with the ribs, add beef broth and bring to boil, put the whole mix in a roaster and seal with foil into the oven at 330ºF for 2.5-3 hours. Either reduce the sauce or make gravy with it. Serve with bacon-fried mushrooms.
