The shrimp scampi with fine pasta was perfect. Getting the lemon right matters and lemons vary.

Chicken with an Orange Sauce and a Barley, Broccoli Side Damn dude. How do you get the barley to hold it's form like that? I use Stainless Steel Winco Food Molds like these, they work well if you prefer professional presentations. I buy them from the local restaurant equipment supplier. Since they cook so quickly, I cooked them in the marinade & it tightened up perfectly.
Prawns first & remove slightly under done, scallops till almost done, prawns & some butter pats for the pan sauce.
Marinade was honey, evoo, 2 chipotles & some adobo sauce, salt & cracked pepper.
Steamed the rice in coconut milk.
