Mr. Jim, that dish brings back some good, albeit misplaced, memories. When I was a kid my parents were very lax with the religious dietary restrictions. My best olive oil and 4 big cloves of garlic. Cooked a bit and added two shallots. Red pepper.
Plus the oil out of the sardines.

Pint and a half of cherry tomato....cooked and smashed most of them.

Little salt and pepper.


Added sardines a few minutes before the almost cooked spaghetti. Fresh basil.


Added pasta water to bring sauce together and finished noodles in sauce.


Grated parmesan on top once on the plate.

That’s Al Pastor. Mexican pork.

Pork shoulder sliced into thin sheets, then marinated in some stuff. There is a vertical steel rod that the sheets of pork are stacked upon. Pineapple on bottom and top. Smoked at 225.slice the outside off and take it to a skillet to crisp up. Repeat
