GENO! I hope you won't vendetta me now or something. Mr. Jim, that dish brings back some good, albeit misplaced, memories. When I was a kid my parents were very lax with the religious dietary restrictions. No pork in the house but pretty much everything else was a wink and a nod, especially shellfish. My dad claimed it was because we lived next to the ocean, so we could eat things like crab, shrimp and clams. My favorite dish of all time was linguini with clam sauce, and that dish of pasta made me think about linguini with clams. If I could eat shellfish again, it would be the first dish I made and it would look like your picture, only with clams. Maybe it's because today was a fast day but dang, that looks good.

Pint and a half of cherry tomato....cooked and smashed most of them. Little salt and pepper. Added sardines a few minutes before the almost cooked spaghetti. Fresh basil. Added pasta water to bring sauce together and finished noodles in sauce. Grated parmesan on top once on the plate.

I haven't had pasta in a long while so this has inspired me for the weekend. Thanks!

Ahem... Pardon me, surr. I was just ponderin on what in the fresh hell is this and why do I think I need this in my life? No bother- That’s Al Pastor. Mexican pork. Pork shoulder sliced into thin sheets, then marinated in some stuff. There is a vertical steel rod that the sheets of pork are stacked upon. Pineapple on bottom and top. Smoked at 225.slice the outside off and take it to a skillet to crisp up. Repeat
