SWFA 1-4x on my 700 with a seven barrel, Ti stock and DBM. Never seen anything but 205gr Amax subs so far. Might switch it with a SS 3-9x at some point but the 1-4x is a good fit with the caliber and platform.
Burning through another 500 or so reloads then rebarreling to 6x45 or 7TCU.

I think stick is right on the 2-12. It gives you parallax for short range, a thick reticle, low light abilities, lowish mounting, and decent dial range. I have a few and like them except for longer range varminting. With subs in a bo you'll want some dial range just to get you to a 1/4 mile. The 2-12 should do it.

I just took one off my 22 Creedmoor and went with a thinner reticle on a 4-16 because I found the reticle on the 2-12 a bit thick for rock chucks past 600. I put the 2-12 on my 7 prc element because the reticle works well for big game. I'm not using the brake on my 7 prc element so it's got a bit of recoil and the 2-12 is holding up.

Schotts glass factory in China builds better glass than their European plants with newer equipment and the ability to still use lead which REACH banned in Europe. There is all range of quality of lenses coming out of China but I understand not wanting to support them while realizing it's almost impossible not to these days. Oregonian's are more communist than most Chinese and most of the optics assembled in Japan are made with Chinese parts.

Most of my favorite optics are made by LOW in Japan but it's hard to find a company that gets the feature mix right.

I have an old 1st gen weaver grand slam on the kids kimber Adirondack 300 bo but I was trying to keep the weight down for my 11 year old. It doesn't have parallax but he's shooting 120g tac tx bullets at 2250 fps for big game. The variable range is enough for him to manage without worrying about parallax in a hunting situation while still being minute of deer.

I'd keep it simple, Maybe an older VXII 2-7 with a LR reticle. Still plenty thick to pick up quickly and the simple hold over points are there if you want them.
