I had friends who cooked one and I tried it. Wasn’t bad. They roasted it like a turkey. Looked like a headless fetus in the pan.

yep grew up eating them in West Virginia ,they considered a deliccisy their growing up their in 60-80's ,.Mom par boiled then then baked them with ramps .and she would roll them in flour and fry them . I have cooked them in crockpot .that good to .it is a dark meat . loved groundhog hunting

I've had one roasted like a pig, in a pit. It must have been an older one, the more you chewed, the more you had. Great flavor, but tougher than a boot.
