Companies developed exclusively for Government Cheese work, quarterly inventory contractors, inspection specialists, quality control contractors, rotation engineers, security even.....
Ate it when I was a kid. They sold excess in Army commissaries. My mom would buy it. I remember it being pretty good. Definitely not Velveeta. More like cheddar. It made great grilled cheese sandwiches.
I remember this cheese from the 1960s. Probably early to mid 1960s. What I saw was a white cheddar. I remember this as I had not ever seen white cheese before at that time and my mother explaining that it was white cheddar. I cannot remember the size, but it was a good size block and had to be cut with a knife. Not soft like Velveeta. That was a long time ago.

I used to work at the company that made the government cheese. That cheese was the best of the best, the government made sure of that. I wish I could still get my hands on the stuff.
