Not into Nick, but I have been a Jacques Pepin fan for a long time.
This below is one of my favorite recipes that Jacques makes with a completely deboned chicken, I have been making it for years with Swiss Cheese. He sure makes deboning a chicken look easy, takes me longer.
I also like Steven Raichlen's Planet Barbecue, lots of great BBQ and Smoking ideas there.
