I know the frame of of the Ruger Police Service Six stainless 38 special is the same size/dimension as the 357 Mag. Can I just switch out the cylinder only to a 357 mag or do I need the whole 357 mag assembly?

Off the top of my head that should be doable if the ratchets aren’t chewed up but why. The Security, Police and Speed sixes were almost all 357 so the 38 specials are harder to find. When I was in the business I don’t think I ever saw any of the Six’s chambered in 38 spl . If your adamant about doing this then I would have a good revolver mechanic ream and hone your cylinder to 357 mag

I wouldn't mess with it. If I wanted more power I would buy some of those supercharged .38 +P's from MacSagebrush or Underwood Ammo.

As MOGC said look into Mackie Sagebrush ‘s offerings. My carry gun is an old Det Spl and I really like his wad cutter loads. Stiff enough to stop a bad guy and very accurate in my gun

I switched the cylinder out on my security six. I made a Faux-Pinto but I used a stainless barrel, cylinder, and cylinder latch instead of nickel plated.
