My wife makes them from the dried beans in a bag, with chopped up collard greens, and cooked with the leftover honey baked ham bone and bits of ham she saves and freezes from thanksgiving every year. Actually it’s really good. Served with homemade cornbread of course. Growing up in California I had never had blackeye peas before, but her family is from the south and it’s a new year’s tradition they don’t skip.
