Between my nephew-in-law and me, we have three German military Mauser 98k actions (made 1937) effectively converted into nice sporting rifles, plus one Browning Safari bolt action. Other than springs, and I include claw extractors as springs, are there parts that cannot be safely nitrided?

I am not asking for a "Why do you want to do it?" response. I just want to be informed of safety issues, including heat treat problems resulting from the nitriding of any particular part and parts likely to suffer warpage.

When I had a modern Mauser nitrided, I seem to recall that anything steel, including action screws, could go in the bath?

After nitriding your Mauser, were there distortion or warpage problems identified as coming from receiver, bolt, cocking piece magazine box, or follower? Of parts, warpage, distortion, or heat treat disruption would really ruin a shooter's day.

That was the downside. . . . Regarding the upside, did you detect improvement in action's operation, or ease of maintenance, or corrosion resistance? Did you find that nitriding was worth its cost?

No, no issues after nitriding. The action ran a bit slicker afterward. If you're looking for a great way to weatherproof non-stainless including the bore, it's worth it.
