It was just getting going at this point. I simmer it until the seeds start releasing.

I do roux a bit different. I brown flower, salt, cayenne and garlic in my Magnalite. Once it's brown, I stir in a little fat from the chicken that I boiled to get the broth and the chicken. I stir it into a pasty consistency. Then I add broth, trinity, chicken, andouille and okra. I bring it to a rolling boil, then dial it back to a long low simmer, seasoning to taste as I go.

I'm in the no okra camp.

If it just has to have it, fry it off before adding to the liquid. Decreases the snot factor.
