Those look fabulous. Haven’t drawn a moose tag in years, but next time I do, that’ll be on the menu. Beef ribs done like that is one of my favourite meals.

About 25 years ago me and three amigos ate a ton BBQ'd moose ribs and drank a case of Alaskan Amber in a motor home down near Turnagain Arm, slept about 4 hours then hit a laundromat/shower place and then on to Anchorage for the flight home.
This was after a week of eating fried razor clams, Salmon done all kinds of ways and moose chili. We farted all the way back home the entire flight. My one buddy was so foul he stopped the stewardess in her tracks, she spun around and retreated to the back of the cabin so fast her looked like she was driving in a convertible with the top down. Good times...
