Most always, I bake my own bread. Sometimes it's wheat or rye, but usually just a hearty white bread. I travel too much to mess with the care and feeding of sourdough. This one is from today. Sure makes the house smell great!
I am with you on the bread making 100% and have not bought a loaf of bread in years.
I make about 10 different varieties now, all better than from a bakery.
Last night I decided to make Cheese Burgers, so I made my Brioche Buns, they were excellent. If you have not made Brioche Buns, give it a try you will love them. If you need a great recipe I can post mine here.
This is the way I do it, exactly as shown in this video, perfect every time, better than anything at the store.

Should have added, different areas have different humidity's which effects the flour, so in the final kneading process, I add bread flour to the mixture, until the mixture is not sticking to the bottom of the Stand Mixer bowl, in my case about 4 tablespoons of bread flour.
We have been making and experimenting with breads this year. Our favorite is an Italian Herb bread. It is one that keeps 3 or 4 days. Wife made a new loaf last night. Fresh bread baking does make the house smell good.
I am gratified that everything so far has been about actual bread, and we have not wandered off into those recreations of what passed for "bread" in Germany as the war drew to a close; those things that incorporate such things as sawdust, tree bark, and the like which result in something that needs two grown men to lift and can only be eaten by beavers.
Not a real member - just an ordinary guy who appreciates being able to hang around and say something once in awhile.
