I live in rural Utah
Pho' is a type of Vietnamese noodle soup. The broth is clear and made with beef or chicken. It takes several hours to cook. The bowl of noodles is assembled at serving time with onions, thin raw beef that cooks when the broth is poured in, brisket, and other things that you can order. The cooked vermiceli like rice noodles are put into the bowl along with the meat that you ordered and the broth is poured over it.
You get a side plate of basil, bean sprouts, chili pepper, and other stuff that you add to to bowl.
I'm not doing a bowl justice in my description. It is sublime.
The best I ever had was at the put-in for the Main Salmon. A fiend of ours is Vietnamese and her mom makes THE BEST IN THE WORLD. It was cold and rainy and were getting ready to launch the next morning. Whitney brought us all Pho. Ever had something so good that you were pissed that you couldn't eat more because you were stuffed?
Found the best way to find out if a Pho joint is any good is to stop by one on an Sunday morning at about 11 AM. If it is full of middle-aged and elderly hung over Vietnamese men, get it line and order a bowl.
