‘Gator tail and haunch can be pretty good. I cook it in small chunks, blackened. Done properly it,s not fishy or tough.

I have had whole legs cooked in a sauce picante. They were fishy. I have had tail nuggets that were breaded and deep fried that were similar to chicken nuggets. It wasn't enough better or different from chicken nuggets to pay extra. If I was to kill one I would keep the meat. We have a draw hunt south of here. I never applied for a tag though. Not that interested.

Had fried gator tail in New Orleans years ago. Was good! Kinds reminded me of fried frog legs but were cooked in smallish chunks.
