I cook my eggs like that in a small Lodge CI pan. I use the lid from another pot that fits down into the taper of the pan leaving only a small space. Cooks them perfectly every time without flipping.

It doesn’t look like Paul does

I have been cracking them in a buttered pan, adding about 3 Tablespoons of water, and covering them with a glass lid from another pan.

Slow simmer until the white cooks and yolk is perfectly runny

It keeps the white perfectly tender and soft.

By far the best eggs I’ve cooked

Use a glass lid off a casserole dish.

You can tell the ones we use the lid on, by the glazed over top.

If I'm cooking in bacon fat, I use a spoon to bast !
