Fried thick cut with sliced home grown tomato and miracle whip. Toasted white bread is the way to go.

Grade school used to put bologna and cheese on half a bun and throw them in the oven. Called ‘em Flying Saucers. Was my favorite meal out of all the delectable choices!

Grew up eating them, my Dads favorite late night snack. Thick sliced garlic Bryan’s Bologna fried with at least 4 cuts in it sos it will fry evenly. Serve on white bread, Duke’s mayo on one side French’s yellow on the other, dill pickles on mustard side, sprinkle with Tabasco on use some jalapeño slices, slice of Vadalia onion, home grown tomato slice, and cheese of your choice. Fine fare. Some Delta weddings feature smoked bologna at the reception. No Chex cereral “trash” less somebody get the wrong idea about one side of the couple to be wed.

While a principal with the Mississippi Band of Choctaw, the cafeteria served boiled bologna slices. Boiled! The slices were swimming in a frothy, unappetizing scum. The doctor (from Minnesota) at the clinic on campus remarked that he had never partaken boiled bologna before. Neither had this southern born and bred Delta boy. Not a good way to prepare this delicacy. I do not recommend boiled bologna at all!

A friend of mine was raving about smoked bologna, so I tried it. Gave him most of it.

New local TA truck stop is owned by a large local ranch that serves a lot of their own meats. Smoked bologna sandwich there is worth the price of admission.
