I picked up an old Russell meat cleaver on Ebay for $8.50. It was in decent shape but the edge was nonexistent. I could have spent way too much time redoing the angles (thick blade) but I wisely decided to pay someone else to do it.

L. Lorenz has been in business for over 100 years (same location) so I took the old meat-axe in for sharpening. They carry a decent selection of knives but they appear to thrive on their sharpening business.

I was told that I could pick the cleaver up in a week. This was fine with me as I was curious what kind of work they did. One week later (yesterday) I picked up the Russell.

The bill: $4.16
The edge: Beautiful!

For less than the price of a combo meal at Wendys the entire blade was polished, primary and secondary angles were recut and seriously sharp. I am impressed.

Before their website tanked I'm 80% sure I read that they did.

I've been sharpening my own blades for a while after some bad experiences with other sharpeners. Some people are "blade butchers", these guys ain't like that.
