Personally, the biggest rifle I've ever used was a .416 Rigby, (97.0 grs. of Rel-19/350 Speer FN) The shot was taken at a lasered 92 yds. 1st time I've ever drawn blood at both ends at the same time. (Damn short eye-relief Burris scope got my eyebrow

At the shot, the deer took two hops and immeadiately expired. (Imagine that!) Thumb-sized entrance wound and the exit wound about 50 cent pc size. After removing the hide, one could easily place one's fist completely through the deer.
BION, there was very little wasted meat.
The dean of big-bores, Elmer Keith, often advocated the use of the .338 Win Mag on Antelope and Deer.
It has been my experience that large bullets in the realm of 2400 to 2600 f.p.s. muzzle velocity produce the desired results with very little meat damage. One could do a lot worse.

Mule Deer , reduced velocity loads for the .340 Wby, should do nicely.
Look in Speer manual #9. They have reduced loads for numerous cartridges. Also, many older reloading manuals have reduced loads.
