If you go with a 260, you could shoot 100 grain bullets faster than is possible from the 6mm and 140 grain bullets almost as fast as from the 7mm-08. Plus, if you want to shoot varmints, you could load the 95 grain VMax. The 260 might be the best dual (triple?) purpose cartridge for the man who loads his own, but it certainly is not the most popular.
The 7mm SAUM is a short 280AI, but I prefer the 700 with a 24" barrel, rather than the 7 with a 22" barrel.
Although I have a bunch of Remington 7s, I currently have 13 of them, I prefer the 700 because there are so many more after-market parts available and often for less $$$.

The Bansner Model 7 stock comes in ADL and is very lightweight.

I'm not a Bansnar/HTS fan, nor am I an ADL blind magazine fan, so that wouldn't be a viable option for me.

Your build plan is very similiar to one I'm currently working on. I am building a 260AI on a Model Seven action, a #3 fluted Rock 5R barrel, Basner stock (with bottom metal), Rifle-X trigger, with bolt fluting/skeletonizing by Karl. For a scope I'm going with a Leupold VX-3 2.5-8 in Talley lightweights. I started the project a year ago and am now about 2/3 of the way done. I hope to be shooting it this Spring. I pick up the barreled action on Wed (Action blueprinting and chambering) and will start fitting/bedding it into the stock next. I'll post some pics when it is done.

They are an awful lot of options available in scope bases for the Model 7--which ones are not out there that you might want?
Just about any option for a 700, as far as modifications, also applies to the 7--which ones do you want that aren't the same?

I have several Rem 700 SA's, and only one Model 7. The Model 7 is a CDL, and I REALLY like it. I can see why guys get hooked on Model 7's. My M-7 is a 223, and the balance is superb. Did a trigger job only on it, and can get 3 shots into less than 1/2" at 100 yards. If I had to make a choice on whether to buy a Model 7 or a 700 SA today, I would have a tough time making the choice. But, My inclination is to go with the 700 SA.

For the M7, Dednutz makes a great x-low one piece mount that's very light..will work with newer 4 hole actions or older 3 hole actions. Talley LW's work as well, but only come in lows (that I'm aware of).

Not sure if the extra 1/2" of receiver in the 700 would weigh more, or less, than the bridge section between the ends of a one piece SA base. But I do know if weight is a concern all steel is not the way to go anyway. Even on the old style Sevens with only three base screw holes the aluminum Weaver base and Burris Z-rings are hard to beat for weight and strength. Same goes for the Deadnutz. If your Seven has the newer 4-hole top then Talleys are a great lightweight option. If WEIGHT is the question then there is no physical way that the 700 (except the Ti) trumps the 7. If OPTIONS are the question then the 700 wins. If COST is the question there is not much difference, if buying new.

The nicest mounts I have for my 4-hole Seven are the S&K two-piece bases and strap rings. They weigh 3 ounces, all-steel, and look fantastic.
Warne steel two-piece Weaver-type bases sit very low to the receiver and weigh 1.7 ounces. With an aluminum ring they come in pretty lightweight also.
Long live the Model 7.
