I found a nice sheepshead mushroom last week. I did a batch in a skillet with butter and garlic but there's quite a bit in the freezer yet. What are some favorite ways to prepare?

Thought you were posting about the saltwater fish YUM. I've heard a few people say that. I always though Sheepshead were full of pin bones. Then again so are mullet and they are mighty popular smoked in the South.

No pin bones in a sheepshead. Just a carcass built like a tank that few wish to bother with. Good eats but you have to work a little to get it.

Yeah, what raghorn said.
As long as you have a good knife (edge holding and decently flexible) you can cut through the hide and walk right over the ribs and end up with what I call "sheapshead shoulders." Nice firm white meat with no bones.

I used to cut cross in front of gills then run your knife 1/4 inch deep back and bottom then take a pair of pliers and skin then cut the fillet next to bone then trim out rib cage. Lots of work but well worth it

I watched Bill Dance Saltwater this weekend. They caught a ton of 5# Sheepshead under the bridges at Destin, FL.
