I'm in the process of building a 7x64 and I'm looking for some input on a scope choice.

I've narrowed it down to three 3-9x's, Sightron Big Sky, Vortex Viper and possibly a Zeiss Conquest.
I've got zero experience with the Big Sky series, I own a Viper 2-7x (which I really like) and I've got Conquests in 4x and 2.5-8.
I'm leaning towards the Sightron or the Viper because of bolt clearance issues with the Conquest. I'm using Talley ultralight low mounts on a santa barbara action and while the bolt clearance is adequate with the Conquest, it's a long way from being ideal.

A Viper from Doug at $249 is very attractive but I'm interested in real life experiences with the Viper and the Big Sky and how they compare with each other.

Doesn't the Big Sky have a "Rainguard" type coating on the lenses? For a hunting rifle, that would be a big plus in my book.

Big Sky scope also feature the Sightron "Climate Control" coating, a no-fog external coating that Sightron, a subsidiary of a camera lense company, has used for some time on camera lenses and filters. This makes Sightron the only quality brand of scope to offer a moisture-repelling coating that compares with Bushnell's Rainguard. Alan Orr mentioned that they tested "non-Climate Control Coating" scopes versus Climate Control scopes, and found that there was no effect on light transmission, and the coating was durable as well.

Liv, where is that description from? I couldn't find any mention of such a coating in the 2011 Sightron catalog nor their website.

I own all three of the scopes you are considering, albeit in different configurations in the Vortex Viper and the Zeiss Conquest. Yes the Sightron Big Sky has Climate Guard which is their form of a hydrophobic coating which for some reason they do not promote heavily. Of the three scopes I prefer the Sightron as the optics and construction are the best in my opinion and it also has pop up turrets for easy resetting to zero after sighting in. It is also made in Japan. It can be found cheaper than the Zeiss. My next choice would be the Zeiss followed closely by the Vortex. However, all of them are excellent scopes and I do not think that you can go wrong with any of them.
