I remember down in Oklahoma, dipping lots of peaches in boiling water and then in ice, peeling them and turning them into jam. Peach jam is pretty good. Big pieces.

I also remember my Italian Grandfather having peaches stewed in red wine. I've had peaches in sauterne and they're very good.

Hard to beat peach cobbler with ice cream. My mother made dumplings (dobs of biscuit dough + sugar?) dropped into cooking peaches or blackberries. Before it was illegal, we poured cold fresh cream skimmed from the top cows milk on them. Good luck.

Not illegal in Kansas to buy/use fresh milk/cream. Can only be sold on the farm and not advertised.

I always plan on making jams but my peaches usually get eaten in cobblers and ice cream before I get around to it

another option is to skin and slice... smash up a vitamin C pill or two in a mortar and pestle and mix with the peaches then put in a zip lock freezer bag and freeze for use later in cobblers or smoothies. The vitamin C thing is from Good Eats, we always used just a teaspoon or two of sugar but the C is suppose to help with moisture retention and color as I recall.

We do the same thing every year only we mix in Fruit Fresh and a little suger. Dump a bowl full in a zip lock, freeze and enjoy when partially thawed. Good treat on a hot summer day.
