I've become smitten with my 7x57, and wouldn't cry if I had to send my .30-06 down the road. The Whelen shoots to good to go, even though I think I'd need to book a brown bear hunt to find quarry that it would take "better" than the 7x57 would.
I can't think of any cartridge that really intrigues me these days, except maybe for the .300 Savage.
Perhaps my "ratings" are skewed similarly to yours, Splatter.

High BC IS vastly ovverrated for hunting bullets and hunting situations. I will take a modest BC and a good penetrating hunting designed bullet all day long over a high BC cup and core bullet. Barnes TSX and TTSX's have moderate to decent only BC's but kill stuff great. The high speeds you can run them at becasue you don't need as much bullet weight to get the great penetration needed offsets the BC numbers at HUNTING ranges meaning, to me, about 500 yards max or thereabouts.

I walk pretty slow and need to rest often, so a slow walk in the bush with a stop every few steps to listen and look just wrks out well for me. Seems the game is not frightened by an old man wandering around in the bush with an old under rated rifle.

I think the 6BR is the most underated catridge by general population. It's supposed to be super accurate but not have much speed... Take a close look at todays 6BR speeds with a 105gr class bullets. Shoots a bit flatter than most hunting bullet MAGNUMS The 6x45 & 6x47 is very underated also!
I'm still in the minority that don't think you need armor piercing bullets to kill deer sized game.
8x57 Mauser. Low recoil Factory loads from Win And Rem,Factory Prvi 196 grain soft at about 2300 penetrates and kills extreemly well with a trajectory Quite a bit better than a 30-30. Handloads as good or better than the 308/30-06 in a good .323 Mauser rifle.
303 British. In my parts, over the last 100 years or so, has shot everything from rabbits to goat, deer, pigs, dingo's, wild dog, buffalo, scrub bull, crocodiles - and back then with the old military surplus ammo.
No fanfare, just got the job done!!!
Ruger make the No1 in 303 British - that would be nice!!!
I wouldn't deer hunt with any of the .22s but I like the .30-30.
the 22's have killed a few deer now, maybe approaching the number killed by the 3030 at this point. At the muzzle the energy is better with a 150 30-30 (1900 vs 1400 energy) but the advantage is gone vice versa by 300 (565 vs 750 energy)
Who is it exactly that is under rating these cartridges?

It is a very nice rifle. I am not giving up my #1, or my #4's though. It is the same here in Canada but different critters. Randy

The 22's and 243's seem to be the most underrated. I used to be in that camp myself, but with todays bullets and good shot placement, they will do the job very efficiently.
Of course they are underrated. Thats because they not as effective or even legal at times.
The tiny bullet boys always have all these requirements. Well if its bullet placement then the 140 gr 7mm that I shoot will drift only 8.4 inches at 550 yards and will be going 2600 fps. The tiny 6mm bullet will drift 13 inches and be going 2500 fps.
Wagons with oxen were a pretty good mode of transportation back in the day too...

Success is found at the intersection of planning, hard work, and stubbornness.
You must remember, about fifty years ago Savage_99 hit a deer somewhere with a Sierra varmint bullet from a 222 and lost it. Therefore using anything less than all the gun you can shoot well is unethical and causes unnecessary suffering.
