I picked up a Sako M 591 LH action new in the box for a great price. Not sure what to build on it any suggestions. I was thinking about a 7mm08 AI

How about just a straight 7mm-08. Is the 591 long enough to run the 7x57 without deep seating the bullets? If so, flip a coin.

Since this is a Medium Length Action the 7mm-08, 6.5 Creedmoor, 260 Rem or 308 would be perfect

Not really it would be better with an 708, 243, 260, 22-250

The guy had three of them, I called him up and got the other two after I got a look at the first one. Another member here wanted one of them, so I have an extra one not sure what I'm going to do with it at this time.

I have a LH M591 that came as a complete weapon chambered in 300winmag. I would say that is more of a long action, not sure what a medium action would be. Was in the Nosler factory store in Bend, Oregon in 2003 and there she sat collecting dust for 2+ years, they had it marked way down, seems they couldn't sell a LH weapon so I relieved them of their stress and purchased it for $349. Tis a fine shootin' firearm, butter smooth and rock solid... You will like the end result in whatever cartridge you choose to build.

You got to have a L691 there is no way the M 591 would work with any thing but medium case.

Hmmm... now you got me thinkin', you might be right on that one, I'm stuck in Afghanistan at the moment but will verify when I get home in middle of December...

Got a RH M591 in 7-08 that is a fine rifle. Only reason the wife hasn't stolen it is the stock is too long for her and she understands that you don't cut down good wood. I'd go either 7-08 or .260.
