the definition of 'Spanish Rice' varies from person to person. It gets mixed up with Mexican Rice, Southwestern Rice, and other dishes. Rice, mixed with some sort of tomato, bell peppers and onion. Some folks put in chopped, cooked bacon and various seasonings. Cut back on the salt to make it low sodium.

Here's one I saw elsewhere, never tried it, but looks fine. Spanish Rice

I like to kick it up a notch with some jalapenos or habaneros. Bam!
Ingredients: 2 cups rice (jasmine rice is good) 4 cups water or broth 3 cloves garlic (minced) 1 medium onion (diced) 1 orange or yellow bell pepper (diced) 1 can Rotel 1 tsp chili powder 1 tsp paprika olive oil salt & pepper
Directions: 1) Saut� the garlic, onion and bell pepper in the olive oil over medium heat. Season with salt and pepper. Add the dry rice and fry until slightly browned. Make sure you stir the rice ever minute or so, so it doesn't burn. 2) Add the Rotel, chili powder and paprika. Mix well. 3) Pour in the water or broth, bring to a boil, then reduce to simmer and cover until rice is thoroughly cooked. Add salt and pepper as needed.

I throw my favorite non-chunky salsa in the rice/H2O mix backing out the equivalent H2O and go. Turns out great.

Made a batch of Spanish rice.
It turned out GREAT!
Used;
1 can un-salted diced peeled tomatoes
1 can low sodium chicken broth
1 can diced green chiles
1/2 of an onion, diced 1 Tbsp diced garlic
1/2 tsp cayenne pepper
1 Tbsp green tobasco
2 cups jasmine rice
Brown onion, garlick and rice in a little EVOO
Add 'maters and chicken broth, simmer for 1 hour.
Had to add 1/2 can of water.
Think next time I'll only use 1 cup of rice, It turned out great, just too much of it.

Virgil B. Thank Karnis,..all I did was repost... Made some today with a couple trout the neighbor gave us. Turned out really well considering I didn't have the correct ingredients. My Walmart didn't have the Tomato Bouillon but they did have the Chicken bouillon. So I used a Chicken cube and some tomato sauce along with the water to make up the difference. Turned out tasty...

Try this...chop up a handful of smoked jowl & jalapenos very fine. Stir fry til it's a lil crunchy in a skillet. Remove & drain. Cook your rice( 2 cups). Add some Mexican style ( hot ) tomato sauce( 8 oz.) & Jowl/ jalapenos & stir in. I'm a Texan & know about this stuff. Trust me..this is better than most restaurants can make...yet sooo simple. Simple is better !

To the OP:
Have you ever tried cilantro rice? There are a few great tacos shops her in the southwest that serve this kind of rice. Has a green color from the cilantro instead of the red color from the tomato...
I made it the other night with homemade chile rellenos and it went over really well.
