Is it all brown ones that signal a cold winter, or the all black ones? I've been seeing lots of brown ones with no black stripe this year.

Conditions and food supply when the critters hatched from the eggs play a lot bigger role in coloration than winter weather does.
Also, black & brown striped one is a Tiger moth larva. A solid black or solid brown one probably is something else.
