I'm partial to Eland.
Gemsbok was pretty dang good as well. Honestly, there hasn't been a meal set before me in Africa that I didn't find appetizing.

Without even a close second, not only in Africa but the finest meat I've ever consumed. Red River Hog from CAR. It was so white tender and flakey, I first thought it to be fish. The taste was that of veal.
The cooking in west Africa is far different than that in east and southern Africa. It is heavily French and Swedish influenced. As a matter of fact the blacks speak Sango and French (and Arabic)

I had heard that zebra tenderloin was the one to beat from our PH in '08. We were supposed to dine on some but it didn't happen.
The best I actually had was Impala backstraps, but my samples were limited as our cook tried to cook American to make us feel at home. She was sweet but we would have liked to try more types of game.

So far my favorite has been eland T-Bones. The worse was hippo.

You may need to explain that for me Randy. I lost a bet with Dad when I was still in high school. He said he was going to shoot a moose I said not. If I lost I had to eat a piece of raw liver. When I went to help him load the moose he would not allow me to eat the liver until after the moose was loaded so that I would be useful. It tasted pretty good actually. At any rate it became a standing joke over tthe years. Just before Dad died I shared my desire to hunt Africa and he told me I would have to eat some liver for him. Hence the honouring of my Dad with the liver.
