I have the Apex Pro. Haven't quite gotten the hang of it yet.
Can't answer your question.

I would not use any system which is based on angles. That includes crock sticks or DMT.
To keep convex the way it should be I use loaded strops or appropriate grit sandpaper on mousepads.

If it were me I would cut several facets at increasing angle and finish off on a mouse pad/abrasive and finally with a strop. But that is because it is what I have on hand.

You can't really Crete a convex on the Apex, but you can "thin" the blade to make a. Pseudo convex by sharpening @ 15-18 degrees, the once you have good flats moving up to 20-23 degrees for the edge.

a convex edge is 'rounded', if you will. It does not sharpen on a system like the EdgePro. Stropping is how you sharpen it. I use a leather strop, with both green and black compound.

There is some good advice found here. The guys are right, you should look at the videos on stoning and stropping a convex edge. It is not hard to do, in fact I see a lot of knives that are started to convex from angled(unintentionally) A little practice, and you will maybe switch all of them(intentionally) Larry
