I soak in ice water w sugar..rinse..then I dry/cool them on a pizza screen...then twice cook like this fellow does then back on the pizza screen ...read as >no paper towel to hold the oil against my frys

Well, it's a lot of work when I can just go over to McD's and pay $1 for the same amount of fries...
