I need some recipes/techniques for Grilled Wings.
I've got access to a charcoal grill and a gas gill, so I'm open to either.

I use a commercial BBQ seasoning, sear them on hot side of the grill, then move them to indirect heat. 10 minutes before done, I slather them in ghost pepper BBQ sauce and cook last ten minutes. Kinda like grilled buffalo wings. I serve with blue cheese and cold beer.

A co-worker grills his til done and skin is crispy. Makes a dipping sauce out of butter and Louisiana Hot sauce and i think some lime juice

Wings marinated in mojo are great and crisp up nicely.
My fav way to cook are to toss uncooked wings in a paste made up of olive oil and Tonys. Cook over indirect heat at 400 degree dome temps.
If you want them spicy toss once grilled in nuked melted butter and fav hot sauce. Of course blue cheese dressing for dipping. Serve quckly so they don't lose their crispy skin.

I could probably eat a few pounds of wings prepared as you describe.
and they grow them by the 100,000 right down the road from me.

I boil wings with seasoning for about a half hour full boil. Then I coat with butter and cook over low direct heat until the skin is golden brown and crispy. I take them off of the grill and drop them into the sauce bowl. I'll get flamed for the boiling but they are good. They are better than deep fried and not greasy. I would grill dry wings (no sauce just seasoning) slow on indirect heat until done, no boiling.
