I am sick of the canned hash and want to take a shot at some homemade. I know the basic corned beef potatoes and probably a onion. Any tips on preparing the corned beef and additons to the hash is greatly appreciated. Thanks

Are you asking about cooking the corned beef? Grinding, the ingredients, or something else?

I suppose a bit of both I figured on cooking it and shredding it the tossing with the potatoes

I don't have a 'recipe' for corned beef hash, but I can tell you how I make it. I use the left over end of a corned beef brisket. It's already cooked, so I just chop it in fine cubes. I do use a small yellow onion, and just dice it up pretty fine. Potatoes are usually redskins. I cut them in a medium dice, and boil them in salted water. Blanch 'em is probably a better term. I sure don't cook them till they are soft. They need to be drained well. In a large skillet, I melt butter, and add a tablespoon of Olive Oil. On fairly high heat, I add the onions first, and cook until they wilt. Then add the 'taters, and use a spatula to push them together. Cook until they start to brown, then gently flip them over. At that point, I add Paprika, kosher salt and fresh ground black pepper. Add in the diced Corned Beef, and mix well. Stir gently until the meat is hot, and the 'taters are crusty.

We cook the corned beef, and potatoes together, then grind the cold beef, and potatoes, and mix. Use enough of the broth for moisture , add some fresh onion, and bake in a shallow pan.

Much like Mannlicher except I like to finish with a beaten egg mixed in and some green onions.

I do pretty much the same, too...but to finish, crack a few eggs over the top, season them, to include fresh ground black pepper, then cover the pan and cook very low until the eggs are set to desired doneness.
