I ran across an article in Shooting Times online, in which the author states the following: The Model 330 was offered chambered for the popular .30-30 Winchester cartridge with a 22-inch barrel. It was quickly followed by the Models 322 and 325 that were chambered in .22 Hornet and .250 Savage (a.k.a. .250-3000), respectively. The Hornet chambering proved very popular, but the Model 325 was quickly abandoned when it was discovered that the bolt was not strong enough the for the high-pressure cartridge.Read more: http://www.shootingtimes.com/2010/09/23/longgun_reviews_st_840roots_200810/#ixzz2uxIglNCaSo was the 325 bolt action (or any other 340 variant) ever really offered in 250 Savage?

That and the "330" was really a "340".
The single locking lug on the 340s always seemed a little "iffy" for 225 Win pressures to me, but they must have been safe enough.
AFAIK, the 340 series rifles were, per the catalogs, chambered in 22H, 222, 223, 225, and 30-30. It seems as though they could have been chambered in 219 Zipper, 32 Win Sp, and 35 Rem without any trouble. I think that the 35 Rem would have been a good seller.

A quick (non-verified) search shows the 225 Win to run higher pressure than the 250 Savage. http://kwk.us/pressures.html

Also I've seen a couple at gun auctions chambered in 225, but they always do over $500. I would like to have one, but not at that kind of money.

I too always looked askance at that single locking lug holding back the pressures from a high intensity round. Probably safe enough as-is, but without much of a margin of added safety/insurance if things go haywire. Some may point out a bit of hypocrisy there since I'm a big fan of the Krag with its single lug, but remember, the Krag factory and government loads only generate 40K pressure, and have a monster safety lug to boot.
