Haven't posted in a while so here we go Cedar planked Tilapia tonight with fresh Asparagus from my garden Here is the plated shot ... my wife's response was she's never cooking fish again. It's all me for now on. Geez! I got sucker written all over my face! Gotta have a night capper. Some fine Bourbon and my belly is full ... life is good!

Looks good RB. As you know, you have just what you need to accomplish far more then those $900 grills we keep hearing so much about. Ignore the envy and lack of knowledge from those starting to realize how little they knew from the start.

I don't see a drink. Haven't drank much since 1st of year ... it's a new me. Decided my health is most important to me & my family after experiencing a few minor health issues. Managed to drop about 25lbs since then, also. Anyway, not saying I'll never drink a drop again but just taking a break from my old ways @ the moment. Grilled/smoked fish again tonight. I go through phases with my Egg. I eat lotsa chicken, then move to pork, then seems like I move to other things. Kinda weird in a way I guess!

I recently got a BGE and have used it a couple of times, rib eyes and a tri tip so far. One of my daughters bought me a 9lb prime brisket today and it's in the frig covered with a rub. I plan putting it on tomorrow at 6am at 300 degrees cooking indirect for 9hrs. or until temp. probe comes up to 195 degrees or so. Will use some red oak chunks for smoke. So where am I going wrong ?

Too much heat for too long. Lower temp or reduce cooking time.

Down to 225, add the meat cold. It will take smoke better that way. Or....run it 300 and reduce time to about 3-5 hours. If temp stalls, remove and foil up and put it back on till it hits 195-205.
Several brisket threads here if you just look for them.
Good luck with it, they really aren't hard to do with a good thermometer.

I have an 11 lb packer on the BGE right now @ 225 degrees .... Father's Day dinner is at 3 pm

I threw 2 nine pound pork butts in my Egg yesterday evening around 6 o'clock. Let them go through the night @ 235 degrees. Just got up and checked on them. IT is currently @ 177. We are eating @ noon today at the wife's family gathering so hopefully the pork butts will hit an IT of 195 by 10 o'clock or so. May have to bump the grill temp up to 250 but that will be a last ditch effort. Patience while most likely going through the stall ... patience.
