Recipe from Texas BBQ Rubs


Bill's Smoked Meat Loaf

3 pounds ground beef
1/2 medium onion, 1/2 medium bell pepper, 6 eggs,1 1/2 stacks of Ritz Crackers, 1/2 cup grated Parmesan cheese, 1/3 cup Texas BBQ Rub, 1/4 cup Worcestershire sauce, 1/2 cup of your favorite BBQ sauce,
1 large foil loaf pan or pan approx 10X5x4
Mix all ingredients then spread evenly in pan. Cook uncovered for 2 1/2 to 3 hours at 225 degrees on the pit. Remove from the pit and pour BBQ sauce on top. Return to pit for 15-20 minutes. Cook to internal temp of 170 degrees.

That looks really good. Here's the one I've made the last few times we've hankered for meatloaf. I picked this recipe up at Eggtoberfest a couple years ago.

Smoked Meat Loaf

Ingredients:

1 lb. Ground Beef
1/2 lb. Ground Pork
1/2 tsp. Dry Mustard
1/4 tsp. Ground Black Pepper
1 Cup Italian Bread Crumbs
1/4 tsp. Sage
2/3 Cup Milk
1 Garlic Clove Crushed
1 Egg
3/4 tsp. Dizzy Pig Cow Lick (or your favorite rub)
1/4 Cup Chopped Onion
1 Tbs. Worcestershire Sauce
1 1/2 tsp. Salt
Ketchup & Heinz 57 For Brushing

Directions:

1. Preheat Cooker to 350*F with indirect setup

2. Add 3-4 Chunks of Cherry Wood

3. Mix all ingredients together in a bowl

4. Brush top of loaf with mixture of ketchup and Heinz 57 and sprinkle with more rub.

5. When cooker is stable at 350* place meatloaf in and cook for 1.5 hours on the grate above a drip pan until done (internal meat temp 150-155*)

6. When meatloaf is done remove and rest for 5-10 minutes before slicing.

I tried going vegan, but then realized it was a big missed steak.

I've been making smoked meatloaf for several years now, it ain't half bad when made with venison either. I usually make a big pan of smoked baked beans at the same time. I really like Montgomery Inn bbq sauce in the beans and meatloaf both
