To turn this Into this And it was awfully good! I just thought there might be leftovers. Instead, it was completely consumed by 10 adults & 5 kids. I threw it on just before 9 pm Friday, & finally saw the fork test behavior I was looking for around 12:30 pm Saturday. The point showed 201.6 degrees with the ThermaPen, and the flat read 203. The point was amazing, though the flat was just starting to dry out. I attribute that to it being a Select grade - the Choice briskets were scarce locally this week, and $6.95/lb. when I could find 'em. If/when I do another Select, I'll wrap it/apple juice it at the break. Happiness, thy name is brisket. FC

.... I'm still too nervous to attempt my 1st brisket This was only my 2nd, and I started out nervous, too. I guess my "only cooked 2 briskets so far" advice is to AT ALL COST, avoid the natural male tendency to dick with it. Salt + Pepper, get & keep it at 225-ish, and don't even think about looking at it for 10 hours. FWIW, I have followed this basic brisket tutorial from BBQ Bretheren. It makes it so easy that you'll never be ashamed of your attempt, and that it'll taste so good you just might be called to a lifelong affair with this chunk o' meat. FC
