Made what I call a farmers omelet. Browned up 6lbs of homemade pork sausage, add 5 lbs hashbrowns, 36 eggs, top it with cheese when cooked.

kinda like we do it down here, when cooking for a bunch. Lots of Dutch Oven casseroles, sausage gravy and biscuits, scrambled eggs in cast iron skillets. laugh

I usually do also along with mushrooms , but a lot of 3 to 9 year olds eating. So I kept it a little simpler. Did have salsa on the side though.

Do you scramble the eggs? I usually drop them on top and leave them whole.

i do a similiar thing at camp for me and my boys. taters and onions fried in bacon grease, add the crumbled bacon, some ham chunks and a bunch of scrambled eggs and cook until dry. one pan to clean and it keeps you full until dinner.

I'll have to try it in the dutch oven. I do something similar for church brunch and when I bring breakfast to our weekly work brunch meeting.

I saute mushrooms, bell peppers and onions then set them aside. Fry up a pound or so of sausage or chorizo, set it aside. Take 18 eggs and beat them with milk and garlic salt. In a large hot cast iron skillet I add butter then cook up 1/2 the egg mix and when it's almost done add 1/2 the shrooms, peppers, onion and sausage then put the mix in a casserole dish. Repeat with remaining ingredients top with fresh ground black pepper and grated cheddar or pepper jack cheese.

We do something similar, but call it "Cowboy Sumbitch".
Kielbasa, potatoes, scrambled eggs, topped w/ cheese.

When the kids was little, I called it "Cowboy-White-Hat-Wearin-Good-Guy-Breakfast"
