I made this a couple days ago and it was really good. I made two 9" loaves baked at 350 for about an hour. I grated the zucchini and the apple on a box grater. About 10 people had it and all liked it. I thought it was really good but I felt it had a little too much cinnamon. I'm going to do it again with a teaspoon of cinnamon and a little nutmeg. I greased the pans and both stuck a little on the bottom. I'd flour them a bit too or put a square of wax paper on the bottom.

4 eggs

1 cup white sugar

1 cup brown sugar

1/2 cup vegetable oil

1 teaspoon vanilla extract

3 1/2 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/2 cup chopped walnuts

2 cups peeled, chopped zucchini

1 cup chopped, peeled apple
