I roasted a chicken last night and had quite a bit of it left over.
Tired of making a stir fry with leftover chicken, so what to do?
I got creative (gasp). Here's what I did.
Cubed up chicken meat.
Put in a heavy pot and browned a little in EVOO with chopped garlic.
Added 1/2 large onion chopped, a cup of frozen corn, a can of diced tomatoes, a can of garbanzos, a can of black beans (rinsed/drained), and 2 cups chicken broth (from cooked chickens we raised).
Added oregano flakes, cumin, 1-1/2 T chili powder.
Simmered until onions were tender and product was of desired consistency.
Served with cast iron skillet cornbread.
I guess it's a thick soup. I could go off the res and call it a chicken and bean chili*
It turned out good. No pics though, so you know what that means.
* I told my wife that except for the chicken, the beans, and the corn......it could be a chili.

Italitexaco Chicken soup/stew? Garbonzo beans and tomato. Black beans and corn. Seasonings from Italy and the Southwest.
Sounds good enough to eat.

I make a chicken chili with garbanzo beans and cannelloni beans So I'd call it chicken chili
And chicken chili does have beans in it !

Definitely a fusion of flavors. It was a wing and a prayer and a different way to make another meal from leftover chicken.
My wife usually is not big on leftovers, but she now has a few containers of this um, ok, chili in the freezer.

New year's Eve I roasted a chicken for enchiladas the next day. In the future, leftover chicken will be used to fill tortillas...

I've gotten used to cornbread in a skillet and have not made it in a square baking pan in a long time.
With just two of us, I cut the recipe on the cornmeal bag in half and baked it in a pre-warmed 8" CI skillet.
I put the full batch in a 10".
I also have the CI corn ear pans. I need to use them again.

at some point I can get around to posting the recipe...enchiladas with tomatillo sauce, but if you can't get tomatillos in the sourdough state, not gonna...
