I've been working on this batch since a little after lunch and I hope it turns out. I've been simmering it for a couple of hours and this is a pain in the a$$. I think that I heard somewhere that ketchup was first marketed as a labor savor and I believe it. You have to love a recipe that starts out with,"Select 14 pounds of ripe tomatoes". The recipe is one I got out of an old Joy of Cooking book. Anyone do this or have tried homemade ketchup? why? Cuz...

Love to try good home made ketchup, but I do have an appreciation for some of our store bought brands after spending a time in Jamaica and eating the ketchup they make there with the pure cane sugars and far less ingredients, way to sweet for me.

I'm on the home stretch here. It's been reduced by half and I just added the apple cider vinegar,canning salt,and a pinch of finely ground cayenne pepper. It's awfully damned soupy... I hope it thickens up as it cools.

also buy German made Michelin tires but I'm not a Nazi.
Michelin are French, not German.

I just tasted it and can't fugg'n believe it..... It taste like ketchup... I spent twenty five smackers and it taste like damn ketchup...

Wash & cut into pieces 1 peck tomatoes : 8 quarts add : 8 sliced medium size onions 2 long red peppers without seeds or membrane
Simmer these ingredients until soft , rub through a food mill
add 3/4 cup brown sugar
Tie in a bag & add : 1 tablespoon each whole allspice , cloves , mace , celery seed & peppercorns 2 inches stick cinnamon 1/2 t dry mustard 1/2 clove garlic 1 1/2 bay leaves
The spices may be varied. Boil these ingredients quickly , stirring often. >Continue to stir until the quantity is reduced by 1/2. Remove the spice bag & add 2 cups cider vinegar (cayenne & coarse salt ) Simmer for 10 minutes longer. Pour at once into sterile jars , leaving 1/8" headroom. Seal & process 15 minutes in a boiling water bath for half pints.
