Looking for something wicked sharp, something I can hopefully touch up when needed,
7-8 inch blade, strictly for fish.
I do see a G-10 by M.E. Miller that looks interesting.

Phil Wilson is the man. I have 3. Heck, Rick Menefee has a Punta Chivato and has called Phil "one of the best knifemakers on the planet." You should email Phil. I've seen Shelter Coves go for WAY less than $400.
Another knife I recommend on a price point is from Mike Young at Sawtooth Cutlery. Award winning fillet's from several of the big shows in the $225 range.
Or, you could try to get a Menefee...took me a year!

I have a Barry Dawson ATS-34 semi-skinner that rocks!
Another option is Dunn Knives. I don't have one of the new ones from Steve Greene in S30V, but it appears to be the same pattern as the one I have from Melvin Dunn in S60V and should be very nice...

Was also just drinking Colonel EH Taylor Jr and reminiscing, and before i got my Wilsons and tripped everything else I had a Paul LeBatard that was quite nice, and well under $200...

I second the recommendation of fillets made by Paul LeBatard. I bought one of his standard fillets and then quickly turned around and got one of his small fillets. Both have beautiful hollow grinds and distal tapers on ATS-34 blades. The large is has a 6.5 inch blade of 1/8 steel with moderate flex, the small is around 4.5-5 on 1/16 steel and is very flexible. They are scalpel sharp and hold an excellent edge. After a deer or cooler of fish they are still extremely sharp and a couple swipes on a ceramic rod bring them back to shaving sharp. I just had Mike Miller build me a fillet knife and i really like it. Thin stock ATS34 with a good amount of flex. Nice hollow ground and fits well in the hand.
