I love a good pot of lentils. Was at Publix today, and picked some up, along with carrots, celery, bacon, onions and garlic. Nothing is easier, or tastier than this. The bacon really sets off the flavors.

I love me a pot of lentils as well. I have a ton of locally made hot Italian sauce in the freezer.
Might have to fix up some lentils and sausage this weekend.

Sam, that looks great and thanks for reminding me it's past time to make another batch of homemade. They're really good and they're really good for you. Here's some made from scratch with chicken sausage.

the only down side of a mess of lentils, is that now I have a gallon of the stuff int he fridge. Guess I'll be eating lentils for lunch this next week or so.

Lentil soup cans very well. I make big batches at a time and can the left overs for hunting camp. There is nothing like coming in from a day of hunting and being able to have a hot pot of homemade soup and fresh pan biscuts. I usually have pints of thick soups and stews in the rig if I'm hunting alone and quarts if with a buddy.
After the first shot the rest are just noise.

I buy it at Doris Market, an old style family owned Italian market. Best store bought sausage in town. I've been buying their different sausages for years.

What are the odds? I made a batch last night!
It looked a lot like Sam's, but instead of cooking it down, I tossed boiled & drained lentils into a lime vinaigrette with the finely diced veggies & a strong shot of chipotle powder. I tossed 'til well coated, then threw it in the fridge so I could have cold lentil salad today.
The fresh veggies have a great crunch that compliments the meatiness of the lentils. If I grow a wild hair, I can mix in some leftover turkey, chicken, sausage, or whatever. It even works as a pita filling.
And every spiral sliced ham that enters the house ends in a stock pot for lentil soup. If more meat is needed, I augment with smoked hocks. My version has plenty of pepper, and will warm even the coldest January day.

I've always been partial to a good mess of pottage, myself.
Not a real member - just an ordinary guy who appreciates being able to hang around and say something once in awhile.

A favorite of mine. I use good a good smoky, meaty ham hock though and let the meat fall off of the bone. If I need a bit more flavor Goya ham seasoning. Also, need the greens from the celery in the mix.

Sam, I'll tell you what did suck, though.. the smoked ham shanks had almost NO meat on them when I pulled them out to strip them and return the meat to the pot in the morning. I had forgotten my new rule about not buying the shanks anymore, and only buying smoked pork "chunks". That way, what you see is what you get. The days of the meaty hocks are long gone, I believe. Glad I fried and chopped up 3 strips of thick applewood smoked bacon and threw them in the pot, too.
