Gerry, Lake trout is a very yellow meat and it is also excellent. They can take a long, long time to grow large so we usually tossed them back in Alaska.
Salmon were much more prolific and as good to eat, or better. Our fave is/was Copper river sockeye (reds) or Yukon king salmon.
