I make a batch every year that seems to be well-received. Two things that I do is 1) wrap them in cheese cloth, brush the cheese cloth with brandy, seal them in Zip-Locks for a month, rebrushing about once a month, and 2) leave out any toothbusting nuts and nut hulls.
