Channel cat are awesome eating.
Only thing better are Crappie!
I’ll take yellow cat over channel and Crappie.
I'll take yellow perch or walleye over all of the above.
Never had either since their not native down here.
They tried stocking some hybrid “Saugeyes” in one of the local lakes, but they couldn’t survive the heat here, I guess.
