I hunt little deer on a steep, rocky island where motorized vehicles are prohibited. I rarely kill one very far from a trail, so I keep 15 feet of 1" tubular nylon tied in a loop in my pack. I gut the deer, throw a clove hitch around the neck, step into the loop, and start walking. My hands are free to carry my rifle and my shoulders take the load.

I carried one out a few years ago and my knees ached for days afterwards. Using the loop to drag one for a mile or two is easier.
