Texoma Caviar

2 cans (14oz) blackeye peas rinsed, drained
1 can white hominy drained
2 med tomatoes chopped
4 green onions chopped
2 cloves of garlic minced
1 medium sweet green pepper chopped
1 jalapeno pepper chopped
1 1/2 cups of chopped onion
1 1/2 cups chopped fresh parsley
1 8oz bottle of Italian salad dressing (we use the Good Seasons packet and mix it up with vinegar and oil)

Combine all ingredients and mix well
Pour salad dressing over mixture, refrigerate at least 2 hours (overnite is better), drain and serve with tortilla chips or as a side dish. Great as a side with ribs.
