That sharpener is OK for junk knives you don't use often, but all it's doing is ripping steel from the edge,creating a rougher edge that will grab and cut. Just use a Dexter Russell Steel to touch up when necessary and only sharpen when you absolutely have to. I prefer to sharpen with a DMT stone but only actually have to sharpen kitchen knives rarely. I just use the steel,keeping the edges straight and cutting. Your knives will last a long time with this method.

All steels are not created equally. The Dexter Russel steels are my current favorites of several I've bought. The others have just been junk compared to the DR steels.

i use those on my rada knives. thats all i butcher with anymore. hard to beat for the price. especially if you only do 2 or 3 deer a year like me.

Yes. They are not a do all. As I stated I'm well versed in sharpening a knife and using a steel.

Agree with you on the Dexter steels. My parents have several.

Clark, thanks for the tip and link. I'm gonna get some of those for my daughter, wife, DIL. They look easy to use and foolproof in the short run.

For myself, that kind of sharpener seems to change the shape of the blade, and over time, changes it quite a bit. IME if you start with a pretty good blade edge geometry, a dual wheel sharpener works well for several sharpenings, until it shaves off enough edge material to make the blade thicker and thicker, closer and closer to the cutting edge. Maybe this item works differently than others of its ilk and I admit that I have not yet used it. My plan to to make a way for wife and daughter to sharpen knives quickly and easily. Then once or twice a year I'll reshape the shoulder of the blade edge so that they can continue using the little quick sharpen wheel tool.

My butcher knives are the black synthetic handled commercial type, the same used at some of the local processing plants. The double steel wheel sharpener works fast and easy for me. Was never said they were used on the collector blades.
