Our noon meal today. It's got to be St Paddy's day somewhere?

I never need the excuse of a calendar holiday to make some corned beef and cabbage.

Here is a picture, as if anyone does not know what corned beef looks like. [Linked Image]

Wonderful stuff - I've got a hunk in the freezer that probably should be liberated.

I smoke the corned beef with pickling spice on top, then I cut it up into chunks when it is done. I put the chunks, potatoes, carrots, and cabbage in the Ipot for 20 minutes and it is pretty insane. EZ to cook and great comfort food for a snowy day.

Me to Jim, we did years back hen we had to butcher a young cow that broke her back on ice. Not the world's best beef, but curing the roasts helped.
